Here we come!

In less than a week, Ry and I will be catching a red-eye flight home to Connecticut! We are so excited to spend time with family and friends, oh, and of course, go on the cruise! For me, I can't wait to go home next week and see all of the green things that grow in the east and not in Utah, like trees and grass!

Of course, I will post pictures from our visit home and from the cruise. It will be nice to get a break from work and MATH! Finally, I hope I can catch a break from these math dreams :( they are worse than nightmares. Ryan, as of tomorrow, is officially done with school! Until he gets his Master's, of course :) But he has his last final tomorrow, and what better way to celebrate a graduation than a beautiful trip to the Eastern Caribbean! We are so excited to see everyone!

And as for me, I just want to go home.

Intense Lightening Storm

There was a huge storm headed for Park City tonight! Unfortunately, it wasn't going to hit Orem :( But I did catch some footage of the lightening! Here are some stills from the footage. Man, I really wish I had a real HD video camera... using my regular camera just isn't cutting it! That way, I could get the video of the lightening and take stills in HD! That would be wicked awesome. But my digital camera will have to do until I strike it rich! I hardly got any pictures of actual bolts because the clouds were too low.

This past week was possibly the last time that all seven of us would spend time together. So we all went to Vegas for the weekend!

RELAY FOR LIFE

Hey everyone!
Ryan and I are doing the Utah County Relay for Life on June 11th-12th here in Orem. Our team goal is $500, and we haven't even raised 20% of it yet! Yummy crab salad sandwiches

oh my GOSH! Ry and I were playing around with dinner the other night and came up with this recipe. The recipe originated from Cooking Light's crab cakes, but I didn't have all of the ingredients and so I kind of made up my own thing. I will also post it on my recipe blog... they are SOOOOOO good! AND wicked healthy!
Crab Salad Sandwiches
Ingredients:
2 Tbsp. finely chopped fresh chives
1 Tbsp. FINELY chopped parsley
1.5 Tbsp. canola-based mayo (can be found at health-food stores)
0.5 tsp. grated lemon rind
1 Tbsp. fresh lemon juice
1/4 tsp. freshly ground black pepper
1/8 tsp. ground red pepper
1 large egg
1/3 cup panko (Japanese bread crumbs)
1 lb. lump crab meat (I use imitation crab meat.. since you can't find any real seafood ANYWHERE in Utah.. grrrrr) (Also, imitatino crab meat contains NO shellfish (mine contains cod), so if you're allergic to shellfish, you can eat this!)
Extra-virgin olive oil
Slices of 100% Whole Wheat bread
Extra canola-based mayo

Procedure:
Combine first 8 ingredients. Add panko and crab, and toss gently to combine. Cover and refrigerate for 15 minutes. Heat oil in a large skillet over medium-high heat. Add crab mixture. Cook until golden, tossing occasionally. Refrigerate cooked crab mixture in a bowl until completely chilled. Mix in enough mayo to the chilled crab mixture so it looks like the right consistency for crab salad. Spoon onto slices of bread. It's also good toasted.
Nutrition (per serving): Calories 292; Fat 22g; Protein 18.7g; Carbs 5g; Fiber 0.5g; Chol 161mg; Iron 1.2mg; Sodium 571mg; Calc 53mg

Why I could never be an english major

I walked out into the living room tonight and Ry was reading this for his class...
This was him posing after I said "Hey! Look smart!" and took the picture. And in the case that you don't believe me that it is seriously the size of a DICTIONARY, here is the last page of the book! I've never seen a page 1545!
I am very content thank you in my major. And p.s. I hate reading things I'm not interested in (i.e. 95% of the crap in bookstores). I will just stick to my little corner of health books and never touch the books Ry reads! Let's just hope our kids (that will be born in 10 years) get a combination of my likes of reading and Ryan's likes of reading! ...or all of his!
